Asparagus and bean salad

Ingredients & Recipe

Boil asparagus in salted water for 3-5 min or steam. Rinse in cold water, cut into pieces. Slice radish into rounds, chop onion. Mix asparagus, beans, radish and onion, add cubed feta, mint, salt and pepper. Dress with a mix of lemon juice and olive oil.

Ingredients:
green asparagus – 250g, cooked white beans – 150g, feta – 60g, radish – 100g, green onion – 1 stalk, mint – 3-4 leaves, lemon juice – 2 tsp, olive oil – 2 tbsp, salt – to taste, pepper – to taste
