Spicy eggplant with mint

Ingredients & Recipe

Trim eggplants, cut into 3-4 pieces, salt, roast 15-20 min until soft. Chop mint, chop onion and garlic. Mix peanut and sesame oil, lemon juice, soy sauce, onion and garlic, salt, pepper. Cube eggplants, pour over sauce. Sprinkle with sesame and mint.

eggplants – 2-3 pcs, garlic – 3 cloves, mint – 3-4 sprigs, green onion – 2 stalks, sesame – 1 tsp, soy sauce – 3 tbsp, lemon juice – 1 tsp, sesame oil – 1 tsp, peanut oil – 1 tsp, salt, pepper – to taste
