Spaghetti with sweet and sour eggplant

Ingredients & Recipe

Blanch tomatoes, peel, chop. Onion – half-rings, chop garlic, slice celery. Slice eggplants, fry in 4 tbsp oil. Fry onion in remaining oil, add celery, tomatoes, simmer 7 min. Pour in vinegar, salt, add sugar. Add eggplants and chili, simmer 10 min, add garlic. Cook spaghetti, mix with sauce.

spaghetti – 300g, eggplants – 3 pcs, tomatoes – 4 pcs, onion – 1 pc, garlic – 2 cloves, celery – 1 stalk, vinegar – 1 tbsp, sugar – 2 tsp, olive oil – 5 tbsp, chili – ½ tsp, salt – to taste
