Lentils with coconut milk

Ingredients & Recipe

Cook lentils until half-done, drain. Blanch spinach in boiling water 3-4 min. Place lentils and spinach in a pan, pour in coconut milk, sprinkle with curry, salt. Cook on low 15 min, stirring occasionally.

red lentils – 250g, coconut milk – 250ml, fresh spinach – 250g, curry – 1 tsp, salt – to taste
