Bake the beetroot in the oven for 1.5 hrs, cool, and grate. Soak beans for an hour. Salt the pork ribs and bake with garlic, bay leaf, and pepper for 20 min at 180°C. Sauté onion, carrot, and eggplant for 2–3 min, add beetroot, simmer 2 min, add tomato paste and sugar, and cook 2 more min. Add potato and ribs to water, cook 5 min. Add beans and cabbage, cook 15 min. Add the sauté, cook 5–7 min. Season with salt, pepper, and garlic.
